Stewed apricots with vanilla and honey.
These sticky sweet, stewed apricots are spiked with orange, cinnamon, vanilla and a dash of honey. Incredibly tender, melt in your mouth goodness. Perfect for spooning over yoghurt, your morning oats, or as a simple delectable dessert.
2 cups dried apricots
4 cups water
1 tbsp honey
1 tsp cinnamon
1 tsp pure vanilla extract
juice of one orange
1/2 cup raw pecans (most types of nuts will be fine)
Place all of the ingredients in a medium saucepan over medium heat. Bring to the boil, then cover and simmer over a low heat for 45 minutes to one hour or until the apricots have become very soft.
In a skillet over medium heat, dry roast the pecans until just fragrant. Be very careful as they can burn easily. Set aside to cool.
To serve, spoon in to bowls then scatter with the toasted pecans.
Serves 4-6
(These are seriously delicious and are even better the next day once all the flavors have marinated a little longer!)
