Raw Spinach & Feta Salad topped with Lemon Mustard Oil, Capers and Toasted Seeds.
This nourishing raw spinach and feta salad is drizzled with a lemon and mustard infused oil, then topped with salty capers and fragrant toasted seeds. Each and every mouth full just bursts with flavor. My idea of the perfect light lunch. Enjoy.
3 large handfuls of spinach, rinsed then finely chopped
about half a block of feta, roughly broken in to pieces
4 tbsp extra virgin olive oil
2 tbsp dijon mustard
1 clove of garlic, finely chopped
juice of one lemon
2 tbsp capers
a large handful of seeds, I used a mixture of sesame, pumpkin and sunflower
sea salt
pepper
In a mixing bowl, add the olive oil, mustard, garlic, lemon and a pinch of salt and pepper. Mix well then set aside.
In a skillet on medium heat, dry roast the seeds until fragrant and slightly browned. Be careful as they can burn easily. Set aside to cool.
Lay the finely sliced spinach on a salad plate. Drizzle with the lemon mustard oil, then sprinkle the capers, feta and seeds on top.
Serves 4 as a side.
