This recipe for Old Fashioned Gingerbread Loaf is easy to make, and has an incredibly light yet moist texture. It is subtly sweetened with dates and has a lovely spiced ginger kick, making it naturally free of dairy, gluten, refined sugar and wheat.
I enjoyed mine with a big smear of homemade jam. A comforting loaf for the cold winter days.
2 cups of ground hazelnuts*
5 free range eggs
1 cup medjool dates, soaked for at least 2 hours then drained well
2 tsp ground ginger
1 tsp ground cinnamon
1 tbsp apple cider vinegar
1 tsp baking soda
*you could also use ground almonds or ground nuts of your choice.
Preheat the oven to 160°C and line a loaf tin with baking paper.
Place the ground hazelnuts eggs, dates, ginger, apple cider vinegar and baking soda in to a food processor. Blend until smooth.
Pour the batter in to the prepared loaf tin. Bake for 40 minutes or until a skewer comes out clean when inserted.
Gently lift out of the loaf tin, and leave to cool on a cooling rack.
