Taste of Thursday with Petite Kitchen: Honey Roasted Peanut Butter with Sea Salt
This recipe for honey roasted peanut butter is deliciously rich, and has the perfect balance of sweet and saltiness. As I roasted the honey coated peanuts in the oven before hand, this simple nut butter blends in to a creamy, slightly crunchy, sweet perfection. I like to spread it on crispy wedges of apple, or on my morning fruit loaf.
Once you make your own, I promise you will never buy the store bought versions again. For all you peanut butter lovers out there, this recipe is for you.
2 cups raw organic peanuts
2 tbsp honey
2 tbsp extra virgin coconut oil, or olive oil
1 tsp sea salt
Preheat the oven to 180°C, and line a large baking tray with baking paper.
In a mixing bowl, combine the peanuts with the honey and sea salt. Using your hands, mix well so that all of the peanuts are evenly coated. Lay the peanuts out evenly and in one layer over the prepared baking tray.
Bake in the oven for 15-20 minutes, or until lovely and golden.
Leave to cool for 5 to 10 minutes.
Add the peanuts to a food processor and process for 1-2 minutes until a crumb like consistency is reached. Add the coconut oil, then process for a further 2-3 minutes until the butter becomes smooth. I like mine slightly crunchy.
Add a little more salt if you desire, cinnamon, nutmeg and vanilla are also tasty additions.
Makes around one jar full.
