Raw Salted Chocolate and Orange Mousse.
Indulge yourself in this perfectly rich and creamy, raw-salted chocolate and orange mousse. It is free of refined sugar, dairy and gluten, and is made entirely with natural, nutrient-rich ingredients. 1 ripe avocado
4 tablespoons of good quality cocoa or cacau powder
8-10 medjool dates, pitted*
1/4 can thick coconut milk (from the top of the can)
juice of one orange
1 tsp pure vanilla extract
a pinch of sea salt
*if you have a food processor that does not tend to blend very well you can soak the dates for a couple of hours before using. This will help the mousse to have a smoother consistency.
to decorate:
zest of an orange
a small handful of shredded coconut
In a small saucepan, heat the coconut milk ever so slightly. Stir in the cocoa powder and whisk until smooth. Leave to cool.
Place the remaining ingredients in to a food processor, then add the cooled chocolate mixture. Blend until completely smooth. About 1-2 minutes.
Spoon into dessert cups, then sprinkle with the orange zest and shredded coconut. Refrigerate for an hour or so or until well chilled, then serve.
Makes 2-4 servings depending on dessert cup size.
